As legend would have it man and beasts lived together in harmony from the creation of the world until a violent break ripped through the middle of the world. Man was on one side and all of the animals on the other. The dog seeing the chasm widening quickly, tried to jump across but only managed to get his front claws onto the cliff of the side the man was on. The man reached down and pulled the dog to safety and ever since, man and dog have been inseparable companions. The dog is now man’s best friend in gratitude and loyalty but forever cut off from the rest of the animal kingdom.
Ingredients
¼ kilo firm tofu
½ cup cooked rice
½ cup cooked calf’s liver, chopped finely
½ cup dry bread crumbs
1 small egg
1 baby cabbage, chopped finely
1 tablespoon tamari sauce
¼ teaspoon chopped fresh thyme
¼ teaspoon chopped fresh sage
1 tablespoon butter, melted
Freeze tofu the night before you plan to use it. In the morning allow tofu to defrost at room temperature.
Heat oven to 175 C. and prepare a loaf pan.
Wash and dry tofu, break up into a bowl. Mix tofu, rice, breadcrumbs, liver, baby cabbage , egg, tamari, sage and thyme. Simply add water if the mix becomes too dry. Place in loaf pan and bake for about forty-five minutes. Serve while still warm for maximum enjoyment. Makes one small loaf.
